I have the best intentions to meal plan and prep, but more often than I care to admit, those plans get um…interrupted (hello motherhood). However, I am excited to find a new staple for the family – whether it is a busy school night or a day we want to relax and just watch football – Jambalaya Girl is now my go-to recipe. And now you can find it at Publix in the rice and bean aisle. (Sale alert: it is 2 for $4 until Jan. 4!)
Easy to make
The box has the simple instructions on back, plus more options online. I cooked it on my stove top in my dutch oven and it was easy and little clean-up!):
- Tablespoon of olive oil in dutch oven and place chicken thighs in to brown over medium-high heat
- After chicken was cooked, placed sliced smoked sausage in dutch oven for a couple of minutes
- Pour 2.5 cups of water and let boil
- Pour Jambalaya Girl mix into pot and bring to boil again
- Simmer for 10 minutes and stir a few times
- Turn off heat, cover and let sit for 30 minutes
- With about 15 minutes left, I popped garlic toast into oven as a yummy side
If you want a little more heat, you can add hot sauce (hot sauce = staple for my husband). The flavor as-is was kid tested and approved. My 1, 3, and 5-year-olds all LOVED it. I walked away from the dinner table and felt victorious. ๐
