I remember the first time I was introduced to an air fryer. It was the beginning of 2018. My co-worker told me about this new kitchen appliance that can make air-fried chicken. I thought she was speaking a foreign language because I had never heard the words air – fry – and chicken in the same sentence. Fast forward to 2020 and the pandemic had my family desperate to eat different home-cooked recipes.

Thus began our air fryer love affair!

While we use it to heat and reheat meals, I have found some delicious recipes that are a favorite of the adults and kids in my home.

Salmon Bowl

Ingredients

  • 1 lb. salmon
  • 1 TBSP Dijon mustard
  • 1 TBSP garlic powder
  • 1 TSP salt
  • Lots of Chile lime seasoning
  • ½ TSP crushed chili flakes
  • 2 TBSP Mayo
  • ½ squeezed lime juice
  • 1 TBSP Sriracha
  • Splash of rice vinegar
  • Toppings of your choice (cucumbers, avocado, scallions)
  • The base of your choice (Jasmine rice is my favorite)

Directions

Coat the salmon with Dijon mustard. Then, season with garlic powder, salt, and Chile lime seasoning. Pop the salmon into the air fryer at 400 degrees for 12 minutes. As the fish cooks, create the sauce in a separate bowl with mayo, Sriracha, salt, pepper, rice vinegar, and lime juice. In a separate bowl add the base of your choice, followed by the cooked fish, then top it off with your choice of toppings.

Fresh Mozzarella Balls

Ingredients

  • 1 container of fresh mozzarella balls
  • 1/3 cup flour
  • 1 egg
  • 2/3 cup breadcrumbs
  • Optional: Garlic salt, Italian seasoning, and crushed red peppers

Directions

Drain the mozzarella balls and pat dry using a paper towel. Add the flour, beaten egg, and breadcrumbs to a separate bowl. Add seasoning of your choice to the bread crumbs. Begin to coat the mozzarella balls by rolling them in the flour and removing the excess with a mesh spoon. Coat them with eggs and remove the excess. Finally, coat in breadcrumbs, and spray your air fryer tray or basket with oil. Cook at 400 degrees for 3 minutes. Every 30 seconds check the fryer and lightly toss around the mozzarella balls to ensure they’re evenly cooked. Serve with marinara and enjoy!

Air Fried Chicken Wings

Ingredients

  • 2 lbs. of chicken
  • 1 TBSP black pepper
  • 1 TBSP Paprika
  • 1 TBSP Cayenne pepper
  • 1 TBSP red pepper flakes
  • 2 TBSP garlic powder
  • 1 TBSP Onion Powder
  • 3 TBSP Dijon mustard

Directions

Clean the chicken and place it in a bowl. Thoroughly pat dry with a paper towel. Coat with 1 TBSP of oil then sprinkle all seasonings. Toss to evenly coat. With seasoning. Place chicken in the air frying basket or on a tray. Air fry for 18-22 minutes, or until the skin is crisp. Flip the wings halfway. Bake time will vary based on the surface area of your air fryer basket.
