Chunky Skillet Sausage Stew

Ingredients
  • 6-8 small new red potatoeschopped into bite size pieces
  • 1medium onioncut into 8 wedges or coarsely chopped
  • 2-315 oz cans of seasoned tomatoes(Italian or Mexican)
  • 1 pound smoked sausagecut into 1 1/2″ chunks
  • 1/2 -1 medium head of cabbagecut into wedges of comparable size
Instructions
  1. In a large skillet or Dutch oven with a lid, place potatoes, onions, tomatoes and smoked sausage. Stir to combine well. Nestle cabbage wedges on top. Cover and bring to a boil. Reduce to medium and cook for 30 minutes (test potatoes to make sure they are done). Serve in flat bowls or plates with high edges due to the liquid. For children or if eating a more soupy version, cut the cabbage and sausage prior to serving. It will need to cool down – all items really hold the heat. Bread can be good for dipping up the sauce, too!
